Presented in a fine grind and packaged in a glass jar, this sea salt retains its natural state, with trace elements almost identical to the sea.

The Isle of Noirmoutier is renowned for its sea salt, with two-thirds of the island comprising sea marshes. Situated in the Bay of Biscay in the Vendee region, the Isle is connected to the mainland by the Gois Causeway. The sunny, almost tropical climate and constant gentle dry winds that assist evaporation make Noirmoutier an ideal location for sea salt production. The Isle is designated as a national nature preserve and is environmentally protected.

The traditional production process begins as Atlantic waters flow into the rectangular, hard sun-baked man-made clay pools on the Isle. Over the course of two days, the sun and wind evaporate the water, creating large, coarse crystals called 'sel gros'. These light gray crystals, derived from the clay, are then harvested by the 'saunier' or salt harvester, using long rakes to gather the crystals and draw them to one side of the pool. Throughout the harvest season, the saunier collects small amounts of the crystals, adding them to the growing pile, which can reach several feet in height.

This sea salt does not supply iodide, a necessary nutrient, but it remains an ideal choice for use as a table salt and for all cooking and baking needs, providing a supreme value for consumers.
